Gluten Free Chocolate Chip Cookies
2 1/2 cups Gluten Free Flour Mix
1 t. baking soda
1 t. salt
1 t. xanthan gum
1 cup margarine (softened)
2/3 cup brown sugar
2/3 cup granulated sugar
1 t. vanilla
11/2-2 cups chocolate chips
Combine the dry ingredients in a small mixing bowl, whisk. In the bowl of your mixer, beat together the margarine and sugars. Add eggs and vanilla and beat well. Gradually add the flour mix until incorporated. Remove the bowl from mixer and stir in chocolate chips.
Drop the dough by spoonfuls onto cookie sheet-I use parchment paper or baking mat.
Baker @ 375* for 8-10 minutes. Remove to wire rack to cool.
